Wanted to create a few shortcuts but realised that the .desktop extension isn’t available for evolution as far as I can see.
Any ideas please?
I just installed it, and Evolution does have a .desktop (but with a strange .desktop name, as Gnome likes it). You can find it here:
/usr/share/applications/org.gnome.Evolution.desktop

Thanks for everyone’s replies. I finally realized there is an option for adding applications to the desktop.
Right click the file manager icon on your desktop and select ‘new’.
Within the drop down there is an option for ‘+ desktop application’.
From there it’s as simple as selecting the app from the list provided.
As long as the application has a .desktop extension then all should be fine.
Hope this helps someone else.
