Having set up USB Live on 32 Gb key and remastered I see:
– About 2Gb used by AntiX system
– 3 Gb allocated to Home folder
How can I increase Home size to max or how can I access the remaining space? I already increased Home persistence to 3 Gb and it was max it allowed me. However the entire EXT 4 partitions size in Gparted shows the entire 30 Gb.

There should be a folder in your home folder called “Live-USB-Storage” or similar. that is a link to the filesystem outside the persistence files. I store my videos there during recording.

I agree! I’ve used antiX for many years and customized it heavily. These days, I use a very basic and simple configuration.
AntiX works extremely well, whether used with no modifications whatsoever or if you modify it to the point that it would be difficult to recognize. That degree of configuration flexibility, along with the modest consumption of computing resources are a great combination.
