So you are safe jdmeamux1952. I am only a couple years younger than you.
Todays recipe?
1/2 cup cream cheese
1/2 cup shredded sharp Cheddar cheese
12 jalapeno peppers, halved lengthwise, seeds and membranes removed
12 slices bacon
Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
Mix cream cheese and Cheddar cheese together in a bowl until evenly blended. Fill each jalapeno half with the cheese mixture. Put halves back together and wrap each stuffed pepper with a slice of bacon. Arrange bacon-wrapped peppers on the prepared baking sheet
Bake in the preheated oven until bacon is crispy, about 15 minutes.
I like them with cream cheese also spread on ritz crackers with a popper on top.

This is an old recipe I have made many times over the road and while trucking.
1 lb fresh meat cut into 1/2-inch squares (ground beef works)
1 lg can diced tomatoes
1 can beans (pinto, red beans, black beans, white beans–your choice) Do not drain.
1 can sweet corn drained
1 can green beans drained
1 small can tomato paste
1/4 cup butterFry meat in oil until browned. Drain. Season with salt and cayenne pepper to taste. Melt butter into meat. Add beans, tomato paste, diced tomatoes, and corn. Simmer for 1/2 hour. Serve over rice (white or brown). Or try it over broken pieces of French bread.

::Perfect Brown Rice
I always had trouble cooking brown rice, except for those Minute Rice bags, until I found this simple recipe.
1 1/2 cup brown rice
3 cups boiling water
3 Tbs butter or margarine
1 tsp saltIn a 3 quart covered casserole, mix all ingredients. Cook at 425 degrees for 1 hour, or until all liquid is absorbed. Remove from oven for about 5 minutes and fluff with fork. Perfect every time.

Buy a wrapped bunch of whole Asparagus.
Wrap each stick with thin slice of Prosciutto < Italian salty bacon/ham, paper thin slices >
Throw them in tin foil as is and seal by crimping the tin foil. Throw in the oven or on a fire with grill on it.
Oven. 400 F at 6 or 8 minutes
BBQ grill or open fire. 5 minutes or so to taste. You can check for being done.
Salty healthy treat also.If you like cheesy. Spread some cream cheese on the mix before grilling. It will melt and coat everything. You can also substitute bacon for prosciutto if living in the boonies like I do and prosciutto is 100 miles one way to procure.

::Roached my gas grill and turned it into charcoal grill. It is now the official go on trip grill. Can burn wood if need be.
Bought the wife a new grill.Starting to cool down outside so we can BBQ chicken. Thighs are on sale this week. Think I’ll make some bbq chicken sliders.
Soak my thighs in bbq sauce for 3 to 4 hours in fridge.
BBQ them till done.
Debone the thighs.Throw my rolls in BBq with butter on top sprinkled with parmesan cheese.
Toast em a little. Start assembly. Wife likes cheese for taste.

::Mix the following in a big bowl:
200 g yogurt
Two tablespoons mayonnaise
One tablespoon mustard
One tablespoon olive oil
One tablespoon salt
Two tablespoons rosemary (Alternatively, two tablespoons dill; I don’t like it with both, I don’t like it with neither of them)
300 g sweet corn (Alternatively, 100g of pinto beans and 200g of sweet corn)Boil 350 g of turkey, shred it, and leave it on a spaghetti strainer (put the bowl with the sauce on top of it for some extra pressure). Alternatively, use chicken, salmon, or tuna.
Boil 500 g of ziti (fusilli, rigatoni, pene, or any type of pasta you like), and strain it.
Mix everything together in a big bowl, and serve.
PS: I did some really weird noises while describing this. I think I should make a video.
