Apt pinning is explained quite well at https://wiki.ubuntuusers.de/Apt-Pinning/ You can use an online translate
service. You can also search for apt preferences, the debian manual is not as easy to understand though.

My aim is to preveent users I support from following internet suggestions and installing gdebi.
Should they force an install they can fix the following self inflicted issues by themselves.

All users should have recent backups so are not helpless. or should not be anyway :-).
